Potato Croquettes
Ingredients
Potatos
Eggs
Polly-O Mozzarella
Bread Crumbs (Plain)
Salt & Pepper
Parsley
Garlic Powder
Oil
1) Boil the potato until it is very well done, practically stuck to the pot (Note: Do not burn)
2) Let the potato cool down (Note: The potato MUST be cool otherwise the egg will cook in the rice and the mozarella will melt)
3) Seperate the yolk and egg white into seperate bowls
4) Mix the egg yolk, salt, pepper, parsley and polly-o mozzarella into the cooled potato
5) After everything is fully mixed into the potato then roll the mixture into small balls
6) Roll the small balls into the egg white and then dip them into the bread crumbs
7) Put breaded balls into the hot oil and fry them until they are golden brown
