Strufoli (Italian Honey Balls)
1) Mix dry ingredients, add eggs, add crisco
2) Knead together as dough will be stiff and best to use a dough mixer (no need to refrigerate)
3) Roll out separate strips and cut off half pieces and roll into balls (keep hands moist with water for rolling)
4) Keep them dusted with flour when finished
5) Deep fry until golden brown, drain and set aside
6) Bring honey and sugar to a boil, add orange rind and continue turning
7) Remove from stove and turn until it stops bubbling (1 min)
8) Add balls and turn to coat all
9) Using large spoon with holes, spoon onto plate making a peak.
10) Pour any extra honey to top and sprinkle with colored balls all around
